Well the ghost pepper sausage turned out better than expected! Very good pepper flavor and not too hot. By the end of the test patty I was sweating with a pretty good mouth burn though, but nothing crazy. If I would have left the inside of the pepper in I'm sure it would have been crazy hot. I used about 40% pork but with the venison. I chopped up the peppers and onions then sauteed them for a while. I got lazy and just used fresh bratwurst seasoning by Backwoods and blended it all together to a loose paste. Mixed it well into the sausage and ground it a second time then stuffed into hog casings. (Yes I used gloves for the mixing) I'll be doing this again the fresh pepper flavor is excellent.

Thanks Reinhard. After looking through your recipes on your site I think I'm going to go with the Fresh Bratwurst recipe and mince the ghost pepper then mix it in. I plan on making some this weekend so I'll let you guys know how it goes!

Not a bad idea. I've never made a really hot pepper sausage so I'm gonna give it a go. Probably just do a couple pounds worth to test.

LOL. Yeah I plan on just using the outside of the pepper, not the ribs or seeds. That should help a bit with the heat. But yea, I'm playing with fire on this one!

So, I have acquired some fresh ghost peppers from a friend and I want to include them in a small batch of venison sausage. Anyone have any suggestions or good recipes for me? Reinhard I need your help! HAHA.
