Pork Butt on a nice day

Put a 7.7 lb Pork butt on 6:15 am. 225 on my Trager. Last night I rubbed it with a nice rub and mustard and wrapped and put in fridge over night. Hope 11 or 12 hours and 195 to 200.........Kirk

Well kirk,let's here your report,what flavor wood did ya use,applewood bath? done by noon or later?,last pork roast I did my pup wolfed it down the second I turned my back may try again after this thread.

Snow, used apple and competition blend pellets. I put my pork butt on at 6:15 am and set it at 225. It was a warm day with no wind so thought ten or 11 hours max. I made a mistake and put the pork butt on right out of very cold fridge without the meat getting to room temperature. The pork took about 13 hours to reach 195. I let it sit for 45 minutes and the flavor was spot on but maybe next time 250............kirk
