Country Style Ribs

Picked up a couple packs of country style ribs that were on sale Friday. Smothered with yellow mustard and seasoned with all purpose rub. Put them on the smoke yesterday in two batches. First batch I pulled at 145 degrees and I let the second batch go to 180. I preferred the longer cook, though both turned out great. A few packs for the freezer. Apple wood, a very low 200 - 225 to let that smoke set in on the thinner cuts.

Highbreeze,

Those ribs look outstanding. How long did you smoke those ribs respectively. I am just starting to dabble in smoking meat. I need all the help I can get. Thanks.

The first batch went for 3.5 hours, second batch went for 5. The last batch I brought the heat up to 250 for the last 45 minutes which put a nice "crust" if you will. I sprayed every hour with a 50/50 mix of apple cider vinegar/water. I use a Weber kettle and this time of year it takes almost double the coal to maintain heat for long cooks as it does in the heart of the summer. I just really got into smoking meats this year and it's been a blast. Be sure to grab a quality dual probe digital thermometer so you can have one probe monitoring meat temp, the other probe monitoring air temp on the opposite side of your heat source. Great way to burn up a day.

Agreed hungry just lookin at these morsels,spray is key,try apple juice instead of water next time,actually apple juice,cider vinegar and for a really nice sweet crust add a tea spoon of apple sauce in spray bottle.apple wood or pecan wood gives great flavor,if ya like strong smokey flavor hickory or misquite wood.

LOW n Slow for pork "serve no swine before its time" meaning take your time can't over smoke swine.

Those look great!

Since people were talking about it, my preferred spray/baste is a dry hard cider with a little sweet baby rays bbq sauce mixed in. Creates a fine crust.
