Thanksgiving Creation

I began working on a different dish for Thanksgiving and thought I would share. Bacon wrapped stuffed turkey meatballs with a mushroom cream sauce.

I started by making an interior filling which was 2 blocks of cream cheese, 1 can of cranberry sauce and a pound of browned sage Jimmy Dean sausage. Mix well together with a beater. This stuff is good enough to serve as an appetizer with crackers which is what I will do with what is left from the meatballs.

I mixed ground turkey with breadcrumbs, eggs, poultry seasoning, sage, garlic powder, salt and pepper. Prepared two boxes of stove top for convenience.

I made half ounce balls of the cream cheese filling and froze them. I then stuffed them inside of stuffing balls and froze again. Then wrap those with the ground turkey and then wrap in bacon.They will get cooked until the bacon is crisp in the oven.

I made the cream sauce with sliced white and portabello mushrooms. Saute the mushrooms with garlic, add cream and chicken stock, season with sage, basil, thyme, garlic and onion powder, salt and pepper. Thicken with roux. This finished meatballs will go on this sauce which I placed in a foil pan until Thursday. Finished product pics pending...

Unfortunately, as I was in the garage at my parents house carving up the multiple birds, mom decided these were best served with the appetizers so they ended up being devoured pretty quickly. I did half in the mushroom sauce and the other half with a sweet/spicy cranberry glaze made with canned cranberry sauce, orange juice, brown sugar and cayenne. Huge fan favorites this year along with a fried bird we injected with sweet Thai chili sauce and a turkey breast rouladen my dad made that was stuffed with country ham, stuffing and confit duck leg meat and also wrapped in bacon, smoked. All in all another good one in the books. Traditional roasted turkey, buffalo injected fried turkey and a cran apple brined smoked bird were the other players.
