Barbecure Sauce Recipes

Plan on making some homemade BBQ sauce because we're firing up the smoker for the holidays and am wondering if anyone has any recipes they'd like to share? We're not too picky on what style sauce, just looking for something tasty.

Check out my site below. I have the Butcher sauce, CaugtaBuzz has his CaughtaBuzz sauce [which is a great mustard sauce] and the Reinhard CaughtaBuzz sauce which is a combination of the Butcher Sauce and CaughtaBuzz sauce. That combo is the most popular. It's in the Smokin Hot page. good luck.

Thanks Reinhard, that Caughtabuzz sauce is one of my favorites. Looking to maybe try something a little more vinegar or ketchup based for chicken or pulled pork.

When I start out making BBQ sauce I start with equal parts of Chili Sauce and grape jelly. Heat that in a kettle and stir until blended. After that, go where the spirit leads you. Ingredients like Molasses, brown sugar and honey tend increase the sweet side, while things like cider vinegar, hot sauce, black pepper tend to increase the heat.
Liquid smoke helps the flavor profile also. Ketchup has vinegar already in it. Use more of that and less cider vinegar.

When I make BBQ sauce it's very interactive, meaning I'm constantly tasting to see what needs to be added.

I once new a gal that would cook chicken quarters in a large electric roaster. She brown it and then put it in there with equal parts of Coke and Ketchup, let it cook with the lid turned sideways for the sauce to reduce around the chicken. It made a great BBQ sauce.

If you're looking for a great sauce for your pulled pork this is the way to roll. Carolina Gold Sauce...

1 quart yellow mustard
3/4 cup honey
1 cup brown sugar
1.5 cups apple cider vinegar
1/4 cup ketchup
1/3 cup Worcestershire sauce
1 Tbsp garlic powder
1 1/2 tsp black pepper

Add all ingredients to a bowl and whisk until well combined

For the chicken this is a Memphis style sauce I like to use...

5 cups ketchup
3/4 cup yellow mustard
1/3 cup Worcestershire sauce
1 cup brown sugar
1 Tbsp apple cider vinegar
2 tsp cayenne
2 tsp onion powder
3/4 tsp celery seed
2 tsp salt
1 1/2 tsp garlic powder
1 Tbsp chili powder
1 Tbsp black pepper
2 tsp liquid smoke
1/4 cup canola oil

Mix all ingredients except for the oil. Bring ingredients to a boil on the stove stirring well to avoid burning. Once hot, remove from the stove and whisk in the canola oil.

Both recipes should yield around 2 qts.

Good luck with the grub! The Carolina gold is one of my favorites that I make.

Those look like winners HB !!!! Thanks for the recipe. My Butcher Sauce is simple and good as well.

One cup ketchup

One cup Western Salad Dressing

Mix together in a pan and bring to a simmer. Add some apple juice to thin it out for a mop sauce. let cool. good luck.

Here's one that I like to make, it is a little different than the basic bbq sauce:

Strawberry-Jalapeno Barbecue Sauce

Ingredients:
1/2 medium onion, chopped (1/4 cup)
1 clove garlic, minced
1 tablespoon cooking oil
1/2 cup catsup
1/2 cup strawberry preserves or strawberry jam
1/4 cup cider vinegar or beer
1 - 2 jalapeno pepper(s), seeded and finely chopped
1 tablespoon bottled steak sauce
1 teaspoon chili powder

Directions
Cook the onion and garlic in hot oil in a small saucepan until tender. Stir in the catsup, strawberry preserves or jam, vinegar or beer, jalapeno pepper, steak sauce, and chili powder. Bring just to boiling; reduce heat. Cook, uncovered, about 10 minutes or until mixture thickens slightly, stirring occasionally. Brush on pork loin ribs during last 10 minutes of grilling. Boil remaining sauce for 2 minutes to serve with the ribs. Makes about 1 cup (6 servings).
