Cold smoked veni backstrap.

After reading the various great recipes on here, I finally got the urge to attempt something new. Being way to thrifty to splurge on an amaze-n-tube smoker, I made my own cold smoking unit. I salvaged a used drill index from the scrap bin at work and removed the innards and tossed the box in the wood stove to burn the paint off, drilled a bunch of holes in it, filled it with pellets and viola: a free cold smoker.....

A veni backstrap piece rubbed with some various seasoning, 4 hrs of light, cold smoke, wrap in bacon, 30 minutes on indirect heat to an internal temp of 135, a move over the hot coals for a quick sear on the bacon, ten minutes in a foil tent, and serve with a little wild rice.......maybe the best veni meal I have ever cooked.....

I do not have the photography skills of some other chefs on here, so I apologize in advance for the crappy pics.....lol.
