English Muffin Toasting Bread

So, I was at a garage sale and picked up a vintage lava lamp and bread machine for $30. I have been trying several recipes through this machine and found a good one. The unit says it is a 1.5 lb loaf pan, but after my initial test, the loaf overflowed and I would probably cut the recipe in half.


Ingredients

1 teaspoon vinegar
1/4 to 1/3 cup water
1 cup lukewarm milk
2 tablespoons butter or vegetable oil
1 1/2 teaspoons salt
1 1/2 teaspoons sugar
1/2 teaspoon baking powder
3 1/2 cups King Arthur Unbleached All-Purpose Flour
2 1/4 teaspoons instant yeast


Instructions

1. Place all of the ingredients into the bucket of your bread machine. Use the smaller amount of water in the summer, or during humid conditions; use the larger amount of water in winter, or if you're in a dry climate.
2. Program your machine for basic white bread, light crust. Midway through the second kneading cycle, check the dough; it should be soft, smooth and slightly sticky. Adjust the dough's consistency with additional flour or water, if necessary.
3. For a true English muffin effect, remove the dough after either the final kneading or before the final rise and roll it in cornmeal. (I just poured the corn meal in just before the final forming stage and this worked well.)
4. Place the dough back in the machine to rise and bake.
Remove the finished bread from the machine, and cool it on a rack.

We love the toasting bread sold in the stores, homemade will be even better. I don't have one of them fancy bread machines but don't see any reason it couldn't be made without one. Thanks for the recipe!

You scored well!!! I am trying hard to make any loaf of bread. I've had good results and some bad ones. I was thinking of sticking with smoking and sausage but I'm giving it another shot. Thanks for the recipe. good luck.
