Easter Beef Brisket

Started yesterday. 9 pound brisket [flat section]. Smeared it with mustard [the glue] and put the rub on it. Wrapped it in plastic wrap and foil and left it in the fridge overnight. Just stuck it with my thermometer and put it in the smoker at 250 deg. Put some beef broth and garlic chunks in the catch pan so I can get some drippings from the brisket. After the internal reaches around 180 I will put the brisket in the catch pan and cover it with foil. Take it out when it reaches 205. Then I will have a little more au jus ready on the stove. Slice the brisket and put it back in the pan, and pour some au jus over the slices . Let cool and put the pan in the fridge until Sunday. Don't have time to smoke it on Sat. good luck.

Sorry for the late pics. Picture of the brisket when I took it out of the smoker and my plate on Easter. All was good. good luck.

ya that's a brussel sprout dish my son-in law makes. Real good. Of course what's not good with bacon. good luck.
