I have one pheasant left from last fall and would like to cook it tonight. It is skinned and gutted. I have done a stuffed pheasant in the oven that was very good but would like to try something different with this one. I thought about beer can pheasant but all the recipes call for a bird with skin intact. I would appreciate any recipes/tips for grilling pheasant.

I also have a mallard that i plucked at the end of the season last year, i wonder how beer can duck would be.....

Plucked would be ideal but not a must....I love doing my grouse this way, pheasant is also good. Here is a link to the recipe ive used many times.....the breast and parts of thigh are great, but like typical the legs have lots of tendons, have to pick out/eat around which some dont like
