Apple Brats

Made 25 pounds of apple brats yesterday fresh. Something I haven't made before. They do have a unique flavor of their own just like other brats. i did add garlic to the mix. That is something I do to every sausage I make. Going to be great on the grill. I only had 3 packs of fresh polish left so I had to make more sausage. My family grabs most of what I make so I will try to keep some for me this time around as well. good luck.

Just had fish dinner but them apple brats sound pretty good. Might try some this hunting season with elk, if we bag one. Thanks.

Ken, I haven't put the recipe on my site yet but will today sometime. The process is about the same as any of my batches of link sausage. Here it is in general:

I used Curleys Apple Brat Seasoning [25 pound batch pack]

19 pounds of pork butt

6 pounds of ground beef

1/4 cup of diced garlic [organic diced garlic from a jar]

5 cups of powdered milk

5 cups of cold water

I ground the meat once through a medium plate. Mixed all the seasoning and garlic in water and mixed well. Put that over the meat. Put the powdered milk on there and mixed everything well. Had my casings flushed and ready the day before. Stuffed the mix into casings. Then I vac packed them, dated the packs and they are in my freezer. Going to make old fashion franks next but fresh instead of smoked. good luck.
