Its not as dark and pretty as yours, and I could have added some more chips, but I don't care for overly smokey flavor and it turned out very tastey.

That is all that matters. Not everyone has the same taste's and you did it the way you like it. Like making sausage. I get the seasonings and then adjust other spices or ingredients that I like. That's what is great about smoking, cooking, grilling, or sausage making. My wife is the same way. When I make some Canadian bacon I put one in my 30 inch Masterbuilt and just give it a couple of trays. In my 40 inch I use the smoking tube [12 incher] which gives me smoke for up to 6 hours so I don't have to use the chip tray. good luck.
