Kirk,most bbq competetions ive been too chefs like they're pork chilled not room temp so they get a perfect smoke ring,hell I can't tell the diff whether ribs or pork roast room temp or chilled when placed in smoker its all good.

picked up a little tip one year,spray bottle with apple cider vinegar,apple cider and apple sauce blended just spray mixture every 30 to 45 minutes towards the end of smoking,then wrap ribs in tin foil drizzel apple juice before wrapping reduce heat to 200deg back on grill or in oven to finish.

thanx for getting me fired up to smoke this weekend.
