From Iron Range.

Smiked up about 15-20 lbs of lke trout.

12 hrs in a brown sugar/salt/garlic/onion/lemon brine. 4 hrs on smoker @185 deg woth alder smoke. Finish at 210 deg for 1/2 hr.

Mmmm mmm tasty.
